Superfoods Harvest Salad!

Who says the holidays have to ruin all your attempts at eating healthy?

The holidays can really make it hard to choose wisely & watch your weight. But if you can come to the party “armed” with right stuff, you can make it to January with your waistline intact.

Now…how can you get a hold of the “good” stuff?

I have just the thing for you…

One of my favorite things to make for a gathering is an amazing salad. I am pretty adamant that it can’t be boring.  I mean, on Thanksgiving for instance, whose going to choose plain old lettuce with plain old salad veggies when there’s stuffing, potatoes, rolls, green bean casserole and 3 kinds of decadent desserts staring at us? Jeesh!

Salad has a lot to compete with it… so it has to look enticing as well as taste rewarding. This salad definitely does both…

The other day, while shopping at the grocery store, I found a new package of salad greens in the section I find all my organic salad in.  I have to say my heart skipped a little…yeah, yeah, I’m a little crazy for getting ga-ga over salad greens but what can I say? There’s something about them that gets me excited. I think it’s because I know the power they hold…

This package I spied contained a mix  of my two favorite superfood powerhouses…Kale & Swiss Chard. Better yet, they were “baby kale & chard” so they were small & tender…SCORE!

I instantly thought of creating an awesome salad chucked full of superfoods. and this salad is just that! I threw this together and confidently brought it to a big family dinner. I wasn’t sure everyone would be a fan but it got great reviews and the bowl was scraped clean. (always a good sign 🙂 ) Honestly, I thought it was one of my better creations (maybe that’s why I thought to snap a photo of it) and I will be making it again for sure!

I can’t decide which element puts this salad over the top…Is it the juicy ripened pear mixed with the feta? The sweet balsamic maple dressing? The glorious pop of those little pomegranate seeds or nuttiness of the quinoa?  Or maybe it’s the delectable roasted glazed pecans that have the perfect combination of sweet mixed with a hint of spice? Which of these amazing superfoods is it?

Hell, maybe it’s just that the whole dang thing miraculously came together perfectly.

Superfood Harvest Salad

5 oz Organic Baby Kale & Swiss Chard –I used Earthbound Farms

1/2 well-ripened pear, sliced

1/2 cup crumbled feta cheese

3 Tbs  pomegranate seeds

1/2 cooked quinoa

2 oz Roasted Glazed pecans –recipe below

Maple Balsamic Dressing- recipe below

Directions:

Mix all salad ingredients together. Before serving, drizzle enough salad dressing to coat (you may not use it all)

Roasted Glazed Pecans:

Take chopped pecans and place in small bowl. Add 1 Tbs Coconut sugar- (Coconut sugar can be found in some grocery stores and most health food stores. It has a taste similar to brown sugar, has a low glycemic index and tastes delicious) Melt 1 Tbs butter and add in along with 2 tsp pure maple syrup and a dash of cayenne & salt. Mix all together and place on cookie sheet lined with foil or parchment paper. Bake at 350 for 10-13 min, until toasted. Let cool before placing in salad.

Maple Balsamic Dressing

1/2 cup Extra Virgin Olive Oil

1/8 cup Balsamic Vinegar

1 tsp Dijon Mustard

2 Tbs Pure Maple Syrup

dash of salt and pepper.

Place all ingredients in glass jar with a tight lid or in a shaker cup and shake until combined.

Make this for your next family gathering. Not only will it taste amazing but you will feel amazing eating it. No to mention the rave reviews you’ll be getting.

I plan to keep this is my rotation and make it again & again. I’m thinking it will pair perfectly with a side of chicken or, of course, leftover turkey!

    Thanks for sharing… this sounds yummy! We eat a lot of tabouli salad but I love Feta cheese…will have to try this soon.
